Caves Beach Brewing Co. began the way most honest things do — quietly, at home, with no grand plan. Phillip Power had been homebrewing for years, tinkering with recipes in the garage the way some people tinker with cars. What started as a hobby — a Brewzilla system, a few fermenters, a lot of trial and error — slowly became something more. The beers got better. The feedback from friends got louder. And the idea that had been sitting quietly in the back of the mind started asking to be taken seriously.
Caves Beach was always going to be the home of it. How could it not be? This little stretch of NSW coastline — with its sandstone caves, its surf break, its tight community of locals who actually know each other's names — has a character all of its own. It's the kind of place that makes you want to slow down, crack open something cold, and pay attention to where you are.
We went through the process properly. Licensing. Food safety. Excise. The full weight of Australian regulatory paperwork — and there's a fair bit of it. We did it because we're serious about this, and because we believe that if something's worth doing, it's worth doing right.
